The legendary Avington Trout fishing is known to all of you who have enjoyed the experience over the years. But did you know that we are probably the only game fishery in England with our own “Smoke House” en site.
We have been cold smoking our Trout for customers, friends and clients for 12 years.
Having stalked and caught your fish, we can cold smoke your own fish for you. You may have it either as a side, or sliced, and vacuum packed, which ever you prefer, in our purpose built preparation facility.
The fish you catch, is the fish we smoke, for you.
For the perfect and most prestigious gift to friends, relations or business associates, why not order your fish to be packaged and vacuum packed in attractive gold card backed packs. You specify the weight of each pack of sliced fish.
Alternatively, YOU enjoy your catch at home, on whole wheat bread, with a little horse radish, or lemon and ground black pepper with your favourite tipple! Or even better, prepared with scrambled egg for the perfect breakfast. Many, many recipes.
The options are endless.
Alternatively we can swap your fish on the day, for pre-smoked fish held in stock. The decision is yours.
BUT BE AWARE
This is not the bland, slimy, flaccid, tasteless, product you can buy at any Super Market. Our fish is dry, full flavoured, and strong. It is for the mature palate. You need very little, to fill the palate with Joy.
The distinctive flavour of Avington smoked Trout is achieved by using seasoned mature oak saw dust, and prior dry curing, as opposed to “brining”. Our product is intentionally dry.
